Hi all! It’s been a tad hectic please forgive my absence, but nonetheless I’m back with a special treat for you all. For the past few weeks many of my readers and friends have seen my face across their television screens on my show Big SCREEN, small BITES on ASPiRE! Thank you to everyone who has watched, tweeted and shared with a friend.
As a thank you I want to give you all a taste of some of the meals I make for my family at home. With a lot happening in your life sometimes our food choices can be far down on the health chain. And as a mother and a wife, my top priority is to make sure I’m here for my family for the long haul. Which means I have to make great decisions about what I eat, especially because my workout regimen right now is non-existent. (Fix it, Jesus.)

Now without further ado – a Hautemommie original recipe! For those days you’re opting into #MeatlessMonday – Quinoa + Mushroom Tacos:
I build my tacos by frying tortillas and adding avocados, sour cream, cotija cheese, and baby kale. Feel free to dress yours however you would prefer. Trust me you won’t miss your beef or turkey at all with these!
